1/4 C. butter (or 2 Tbsp. Olive oil)1/4 onion, finely chopped1 Garlic clove, minced1 Cauliflower head, grated (or 3 C fresh cauliflower rice)1 C. Zucchini, small chopped1/2 C. Heavy cream1 C. Parmesan cheese, grated1/2 tsp. Pink salt1/4 tsp. Black pepper, ground1/4 tsp. Nutmeg, grated

STEPS:1. Heat up oil (or melt butter) in a skillet over medium heat.2. Add Onion and cook until tender. Add Garlic and cook until fragrant. 3. Stir in Cauliflower rice and cook for 3 minutes. Add Zucchini and cook for another 3 minutes.4. Stir in heavy cream, cheese, pink salt, black pepper and nutmeg. Cook for 5 minutes or until creamy consistency. 5. Serve warm and enjoy!NOTES:1. This is a keto friendly version, which means high fat and low carbs. Check out the options below.2. You can replace the heavy cream by combining 1 tablespoon of corn starch with 1/2 cup of cold water.3.
