As a mom recovering from autoimmune dysfunction and lyme disease, I decided changing my nutrition  to a low-inflammation protocol was needed to get on a path to better health. On this quest, I looked high and low to find a pancake mix that met my needs and that I could enjoy with my son for our Saturday morning brunches. My search for a “clean”, grain-free pancake mix proved to be quite difficult. After trying several unsatisfactory store-bought options, I took on the challenge to create my own recipe. My repeated experiments in the kitchen led to a recipe my family and I could all enjoy! I have turned a few of my favorite recipes into products so I can share with you in hopes to encourage your health journey.
