Rachael Lancaster is a wellness coach who ditched NYC for a life of wild adventure. She is a professional house sitter who has traveled the Pacific Northwest, South West  and California over the past 2 years taking the most breathtaking photos along the way.  She  went from novice camper to full-blown solo adventurer- let her bravery and her badassery inspire you !

She's also a nutrition expert and a vegan: here is her yummy hot cacao recipe;

1-2 teaspoons raw organic cacao powder
1.5 cups organic soy or oat milk (unsweetened)
Pinch sea salt
2 drops vanilla extract (optional)
1/4 teaspoon unrefined coconut oil
Sweetener of choice, to taste. I use coconut sugar, maple syrup and/or stevia or monkfruit.

To make:
Place all ingredients in small saucepan and heat on medium, whisking until it’s combined.
Enjoy!

Pair with a Hail Mary raw chocolate for extra YUM. enjoy after a hike, in a natural spring while gazing at the sunset.
